This dish is also good with romaine lettuce instead of cabbage - that's how I grew up eating this dish. @RoyalLAO - the peppers are supposed to be cooked dark and to a slight burn. The burn is what gives them flavor. That doesn't make this dish Americanized . . ..besides, 90% of Americans won't touch a Thai chili.

I finally made this; I think it was the best seitan I've ever made. Very easy, too! Totally nonintimidating seitan. I'd never steamed it before. Sensing greatness and reading that they freeze well, I doubled the recipe. After putting half in the freezer and eating the rest for three nights in a row, I still had an unfrozen patty left over, so I crumbled it and put it on a whole wheat pizza crust with pesto, caramelized red pepper jam, vegan feta, and spinach. It was PERFECT.
