Actually 90% of the time your food will taste fine with cold water instead of stock. It's not worth using canned stock. Only use stock if you make it yourself.

that looks easier than I have ever seen how. In the 60's,up near Eastport,Maine, I had gone out for lobster, only back then, you pegged them closed. In Calis,Maine,we dug piss clams,while the tide was going out. Never thought back then to cook 'em like that. Steam the clams, boil the lobsters. You got it in one easy step. This, i gotta try!!! shrimp paste at an asian market is a very distinctive flavor of southeast asian cuisines. it is fermented and is nothing like ground fresh shrimp. also, i grew up in the south near new orleans and have never heard of grinding shrimp for gumbo...but i'm not an expert in that area. i'll have to check that out. chef, i found your videos last night and LOVE them. i'm making shrimp curry now, but a little different than your demo.

why not just buy 'shrimp paste' (you can buy this at an asian market) and add that during the stage you ground the shrimp up at the start? Also grinding the shrimp up at the start to add to the sauce isn't so unusual, it's standard for a shrimp gumbo (cajun recipe)
