I am enjoying your videos a lot, and they are helping me as I am a student and even though my dad is a crazy good cook (he loves it as a hobby) im not very good at it. The sauce looked too watery for my liking, but the chicken looked good. My dad nearly always adds wine to his sauces.

We haven't encountered that problem. With Indian cooking, especially North Indian, tomatoes are generally added in the beginning with onions, ginger and garlic to form a "masala". Meat and vegetables are then added to the masala. If anyone knows of any scientific research on this, we would be interested in knowing. Thanks.

the way I do my chicken curry , fry onions first then add ginger and garlic then add 2 sticks cinnamon,6 peppercorn,4 cardomom,1 teaspoon cumin seed,5 whole cloves,2 bays then after a couple minutes I add the meat(already mixed ahead with tumeric) and stir fry a minute or so then add the tomato and water, after its come to a boil ad the chilis, when its done I add cilantro. I like my curry spiced well and hot, but lately my stomach cant take it :)so I will try this because it look less spiced.

Indian cooking use a lot of yogurt and all these different seeds/spices... In Guyana, we don't use all that stuff in our curry and it taste way better than India/Paki cooking.

you can tell how much goes in if you watch him put it in. Also, with Indian curries, there is no "exact" amount (it's not like baking). So unless he tells you (like with the fenugreek seeds) you can adjust to your taste.

shrimp paste at an asian market is a very distinctive flavor of southeast asian cuisines. it is fermented and is nothing like ground fresh shrimp. also, i grew up in the south near new orleans and have never heard of grinding shrimp for gumbo...but i'm not an expert in that area. i'll have to check that out. chef, i found your videos last night and LOVE them. i'm making shrimp curry now, but a little different than your demo.

why not just buy 'shrimp paste' (you can buy this at an asian market) and add that during the stage you ground the shrimp up at the start? Also grinding the shrimp up at the start to add to the sauce isn't so unusual, it's standard for a shrimp gumbo (cajun recipe)

Hey chef, I wanted to ask you that why don't u fry the lamb in ginger and garlic before cooking it in the pressure cooker. I do it because red meat always releases water and blood when it is cooked. I fry the meat in ginger and garlic untill all water evaporates and oil ozzez out from the mixture.
