The Chamber Singers at my high school did an a capella arrangement of this song, and it's floated into and out of my head ever since. At the moment I'm studying abroad, separated from my girlfriend by fifteen hours and an ocean, and listening to this song makes me think of her and wish I were with her. While I won't go so far as to say 'they don't make music like this anymore,' I will say that it's a rarity. Perhaps a better phrase would be 'music like this isn't popular anymore'... if only.

What a beautiful song!! There isnt anything today that compares. This song is close to being around for 40 years-songs, and music like Bread's stand the test of time. None of the crap on the radio today even deserves to be mentioned in the same breath as this. Bread was such a class act. LMAO! What labor? It takes all of....what 5 minutes to get a bowl, flour and salt from the cabinet, water from tap, and mix. Wheres the labor in waiting? Have you ever tried bread that takes hours to rise? It is the long rise time that gives it its unique flavor that you cant get from the two hour start to finish bread that most of the people make. Try it youll see the difference in taste and texture I assure you.

Tamar1973, have him try this out! It is awesome crusty, rustic bread. Like mentioned before, after proofing 12 hrs, shape the loaf and let rise another 1 1/2 to 2 hrs. I use a cast iron fry pan and an inverted metal mixing bowl....the crust is out of this world. Good luck, and enjoy!

Yes, you should let it rise again for 2 hours after you roughly shape it - don't worry about shaping it perfectly. It looks more rustic imperfect. I do not use the towel to cover: I place the shaped dough on the floured lid of the bowl the dough was in, and cover it with the inverted bowl for the final rise. Even simpler!! The NY Times has the exact recipe and Mark Bittman has a follow-up article sharing his variations. Just search the NYT website. Good luck!

Any yeast should be just fine, although instant yeast probably works nicely because you can mix it nicely into the flour before adding the water so that's well-distributed. If you're using active dry yeast, I'd "start" it, then mix it as well as you can into the water, then add it all at once. No clue if you're using compressed yeast.

3 cups of white bread flour
2 tablespoons of sunflower oil
4 tablespoons of low fat yogurt
1 teaspoon of honey
1 teaspoon of salt
3/4 cup of warm water

Oven is between 200c and 220c.

Olive oil is by far the healthiest option. Not the cheap stuff though. You want italian extra virgin olive oil. Can cost a bit (up to £3.00 for 75cl) but it's worth every penny!
