Hi Johsjack, Yes, noodles are great. I think almost every major culture has noodles of some type. They are a very ancient food. Scientists found 4000 year old noodles made from millet buried in a bowl in China!

Hi LIVELISTENLAUGHLOVE, I don't think it's necessary to drain and add fresh water. I'm guessing that some folks might feel that draining the water would provide for a clearer broth. If I were to drain the water, I'd also have to remember to slightly undercook the noodles since I'd have to bring the water and noodles to a boil again in order to poach the eggs I added. And that's all I have to say about that. Thanks for asking!
